The hour-by-hour outline of a resort day we would sketch for ourselves on a Tuesday in late June. Modify as you prefer.

07:00 · Quiet swim

The pool is still empty and towel service has not begun. A coffee cart sits by the entrance with single-origin filter coffee, no menu and no line. These thirty minutes are the finest of the day.

08:30 · Terrace breakfast

Eggs cooked to order, pastries fresh from the kitchen oven, a modest plate of seasonal fruit. We reject breakfast buffets. We favour plates brought by waiters who have known the same families for ten years.

10:00 · Spa or sea

Either choice works. The spa hammam is luminous and hushed in the morning. The sea is gentlest before midday. Most guests pick one and wish they had done both; a few manage both.

13:30 · Long lunch

Three hours at the lagoon bistro, a bottle of light white and grilled fish you had not planned to order. No phones, no hurry. This is the meal that stays with you.

18:00 · Golden hour terrace

Aperitif on the upper deck. By the second day the bar team will know your name. The house negroni rests on a vermouth we produce on-site; it is the most unexpected pour on the estate.

21:00 · Tasting menu

Eight courses, two hours, one wine pairing. Years of work sit behind this evening. We trust it earns the journey.

23:30 · A short hour at the table

Or an unhurried walk back to the suite. Either path: tomorrow opens at 07:00 with a swim, and that loop is the whole idea.
